Traditional Taiwanese Tie Guan Yin (or Iron Goddes of Mercy) is a charcoal roasted tea with medium oxidation that has been historically made from the Tieguanyin Cultivar in northern Taiwan. Our Bronze Guan Yin is a modern interpretation of the classic tea, made from a local variety of Jin Xuan cultivar named Su Xin 素馨 (White Jasmine) and roasted in an electric oven, giving it a unique character. First, roasted coffee and malt aromas greet your nose. Then, the malty sweetness with a roasted note continues to tease your palette. Finally, the mild citrus finish surprises you at the end. After withering, the tea leaves undergo controlled stirring to enhance oxidation. The tea is roasted using a slow-fire method, repeatedly for over 10 hours. The components in the tea are transformed by the heat, creating a unique aroma and flavor. Su Xin's distinctive characteristics of fragrance, mellow taste, and gentle sweetness and make it shine in this lovely tea.
